Périgord - 'Black Diamond' and white truffle

Truffles grow symbiotically with oak, hazels, birch, pine or lindens, found hidden underground. Sizes range from 4cm in diameter and above 12cm in diameter, depending on the species of truffle. Truffles are mostly hunted using pigs or trained dogs or by spotting truffle flies that hover over truffled ground. Truffles have to be stored in airtight containers with rice to absorb moisture. 

White truffles are mostly found around the countrysides of Alba, Italy, and are available during autumn (september - november).  It has a strong pungent garlicky aroma, and is best served shaved paper thin onto dishes right before serving due to its volatile flavour compounds.

White Truffle
Périgord is a black winter truffle named after the region in which it is renowned for. They are in season from december to march. In contrast with white truffles, the flavour of black truffles are enhanced through gentle heating, upon doing so releases an cocoa, and earthy aroma.
